Ingredients for 2 servings:
- 2 chicken breasts
- 3 tomatoes
- 2 balls of mozzarella
- 2 tbsp olive oil
- 6 stalks of basil
- ½ tsp chili powder
- some salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Cut the chicken breasts lengthwise to create about 4 equal pieces. Brush the chicken pieces with olive oil, then gently dust with chili powder and season with salt and pepper. Place the chicken pieces in an ovenproof dish and roast in a preheated oven at 180°C (convection oven) for about 10 minutes. Meanwhile, slice the tomatoes. Drain the mozzarella and slice it as well. Wash the basil, spin it dry and cut the leaves into strips. After 10 minutes, remove the dish from the oven. Alternate the chicken with tomatoes, mozzarella and basil, season again with pepper and salt and then return everything to the oven for about 10 to 15 minutes, until the cheese begins to brown slightly. Arrange the dish on plates and serve immediately, hot, with your choice of side dishes.
