Ingredients for 4 servings:
- 4 chicken breast fillets
- some flour
- some olive oil
- 1 red bell pepper
- 1 yellow pepper
- 80 g olives, black, without stones
- 80 g capers
- some vinegar
- some sugar
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Cut the chicken breast fillets into cubes and coat with flour. Wash, trim, and strip the peppers, and slice the olives. Add a little olive oil to a pan and fry the chicken cubes. Remove from the pan and set aside. Add the pepper strips to the same pan and fry, adding a little water or wine if it’s too dry. Add the capers and olives, cover, and simmer over low heat for 15 minutes. Add the chicken cubes and season with vinegar, sugar, salt, and pepper. Simmer for another 10 minutes. Serve with rice or pasta.
