Blackberry slices with crème fraîche topping

Ingredients for 24 servings:

  • 1 baking mix for crumble dough
  • 750 g blackberries
  • 4 eggs, including the yolk
  • 200 g sugar
  • 1 bottle of flavoring (lemon baking flavor)
  • 1 pinch of salt
  • 100 g almond(s), ground, pulled
  • 150 g crème fraîche
  • 4 eggs, of which the egg whites
  • 50 g sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare the baking mix according to the instructions or make your own crumble dough using the basic recipe. Place the crumble on a greased baking sheet and press down lightly. Spread the washed and well-drained blackberries on the dough. For the glaze, whisk the egg yolks, 200g sugar, lemon oil, and salt until frothy. Add the almonds and crème fraîche and mix. Beat 4 egg whites with 50g sugar until stiff, then fold into the egg yolk mixture. Pour the glaze over the blackberries, smooth it down, and bake immediately. Power: 170-200 (preheated), Gas Mark 3-4, approx. 30 min.
