Ingredients for 1 servings:
- 1 chicken breast fillet(s)
- ½ bunch arugula
- 2 tbsp arugula pesto
- 6 slices of mozzarella
- e.g. olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
from the oven
Preheat the oven to 200°C (top/bottom heat). Make diagonal cuts in the fillet, but do not cut all the way through. Place a slice of mozzarella and a little pesto into each cut. Oil a baking dish, then line it with some arugula. Place the fillet on top. Drizzle everything with oil and a little pesto. Cook in the hot oven for about 20 minutes.
