Chicken breast fillet with egg in mustard sauce

Ingredients for 2 servings:

  • 400 g chicken breast fillet(s)
  • 2 eggs, hard-boiled
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 tbsp mustard
  • 150 ml vegetable stock
  • 50 ml cream (or coffee cream)
  • salt and pepper
  • 1 tbsp lemon juice

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the chicken breast fillet, season with salt and pepper, and fry well. Roughly dice the boiled eggs. Melt the butter and sauté the flour in it until golden brown. Slowly deglaze with the vegetable stock, stirring constantly until the sauce reaches the desired consistency. Simmer the sauce for about 10 minutes. Stir in the mustard and cream. Season with salt, pepper, and lemon juice. Add the meat and eggs to the sauce and reheat. Serve with boiled potatoes or toast.
