Chicken breast fillet with walnut crust

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 100 g walnuts
  • 50 g Parmesan, freshly grated
  • 125 ml whipped cream or 2 tbsp sour cream
  • salt and pepper
  • Paprika powder
  • 1 handful of parsley
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 150°C (top and bottom heat). Wash the chicken breast fillets, pat dry, and season lightly with salt and pepper (rub into the meat). Heat oil in a hot pan and briefly sear the fillets on both sides. Remove and place in a baking dish. Mix the walnuts, cream (or sour cream), Parmesan, and parsley thoroughly (preferably in a food processor), season with salt, pepper, and paprika. Brush the chicken breast fillets with the walnut mixture. Bake in the oven for about 30 minutes, until the crust is golden brown and crispy.
