Chicken breast with banana

Ingredients for 4 servings:

  • 4 half chicken breasts
  • 4 slices of Parma ham
  • 4 small banana(s), sliced
  • e.g. basil
  • 150 ml chicken broth
  • 2 tbsp crème fraîche
  • pepper if needed
  • lemon juice if needed
  • Butter for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Delicious, quick and easy!

Wash the chicken breasts. Place a slice of Parma ham on each breast. Add the banana slices and 2-3 basil leaves, if desired. Roll up the chicken breasts and secure with two skewers. Briefly sear on all sides in melted butter in a pan, then wrap in aluminum foil and place in a suitable casserole dish. Finish cooking in a preheated oven at 180°C for about half an hour. Meanwhile, add the chicken stock and crème fraîche to the pan and make a sauce. Season to taste with pepper and a few squeezes of lemon juice. Serve with rice.
