Chicken breast with basil and garlic

Ingredients for 4 servings:

  • 4 chicken breasts
  • 2 tbsp oil
  • 3 garlic cloves, chopped
  • 1 shallot(s), chopped
  • 1 handful of basil leaves, fresh
  • 150 ml broth
  • 300 g tomato puree, alternatively chopped pelati
  • 100 ml cream
  • 50 g Parmesan, grated
  • some salt and pepper
  • a little paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Pat the chicken breast dry and season with salt, pepper, and paprika. Brown in hot oil on both sides for about 1 minute. Remove the chicken from the pan and place it in a gratin dish. Add a little more oil to the pan and lightly sauté the chopped shallot and garlic. Add the stock, tomato puree, and cream, and bring everything to a boil briefly to loosen any browned meats. Now add the Parmesan cheese and the roughly torn basil leaves, and season with salt and pepper. Pour the sauce over the chicken breast. Bake in a preheated oven at 180°C for about 15-20 minutes (depending on the thickness of the chicken breast). Once baked, this family-friendly dish is ready to serve. Served with rice, potatoes, or pasta, it’s a delicious meal the whole family will enjoy.
