Ingredients for 4 servings:
- 4 chicken breast fillets
- 1 bell pepper(s), yellow
- 1 bell pepper(s), red
- 1 zucchini
- 250 g cocktail tomatoes
- 250 g mushrooms
- 250 g treble hooks
- 2 m.-sized onion(s)
- 2 garlic cloves
- 100g hummus
- salt and pepper
- Paprika powder
- Garam Masala
- some olive oil
- ½ lemon(s)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Preheat the oven to 200°C fan/convection oven. Wash the vegetables, mushrooms, onions, and garlic, if necessary, and cut into bite-sized pieces. Place everything on a baking sheet lined with baking paper or in a wide casserole dish and drizzle with olive oil. Season the vegetables with salt and pepper and mix well. Place the whole chicken breast fillets on top of the vegetables and spread with the hummus. Season everything again to taste with paprika, garam masala, salt, and pepper. Squeeze half a lemon and drizzle the juice over the vegetables and chicken. Bake the dish in the hot oven for about 30 minutes. If serving four, one serving has 320 kcal. Tip: Serve with a light yogurt sauce with mint or ajvar, for example.
