Ingredients for 4 servings:
- 4 chicken breasts, alternatively turkey
- 100 g black olives, sliced
- 4 tbsp balsamic vinegar
- 2 lemons, squeezed
- 1 bunch of basil
- 2 medium-sized tomatoes, peeled and diced
- 4 tbsp oil
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Chicken Sicilian style
Heat oil in a covered pan. Brown the chicken or turkey (on both sides). Add a little water. Add olives, balsamic vinegar, and lemon juice, and simmer over low heat (with the lid closed). When the meat is still pink, add tomatoes and basil, season with salt and pepper, and reduce the heat with the pan uncovered. Serve over fresh spinach pasta with garlic bruschetta. Serve with a good glass of red wine and a fresh salad.
