Chicken Breast with Mango Pepper Vegetables

The perfect chicken breast with mango pepper vegetables recipe with a picture and simple step-by-step instructions.

  • 2 Chicken breasts
  • 1 Mango
  • 1 Red or yellow peppers
  • 3 Spring onions
  • 2 Garlic cloves
  • 1 Lime
  • Parsley
  • Curry
  • Salt
  • Pepper
  • Pimento
  • Olive oil
  • Rice
  1. Place the chicken breasts in a container. Add a little olive oil, pigment, salt, pepper and curry. Peel a clove of garlic and press it over the meat using the garlic press. Mix everything well and set aside.
  1. Boil the water for the rice. Put some lime juice and salt in the water.
  1. Core, wash and cut the peppers into small cubes. Peel the mango and cut the pulp around the hard core into small cubes. Peel the spring onions and cut into rings.
  1. Heat olive oil in a saucepan and fry the peppers, mango and spring onions for about 5 minutes. Press in the second clove of garlic. Add a little water and let it simmer for another 5 minutes.
  1. In the meantime, fry the chicken breasts in a pan with the oil from the shell.
  1. Drain the finished rice. Mix the pepper, chopped parsley and the juice of half a lime into the rice.
  1. Season the vegetables with curry, salt and pepper (possibly a little vegetable stock). If you like, you can add some chili powder here.
  1. Arrange everything on a plate and garnish with a lime wedge. Good Appetite! 🙂
