Rub the meat on both sides with olive oil, season with salt, pepper, paprika, and some chopped parsley. Peel and finely dice the onion. Brown the fillet over medium heat. Add the butter, melt it, and drizzle it over the meat with a spoon. When the meat is cooked, remove it from the pan and keep warm in the oven. Add the onions to the pan and cook briefly until translucent. Deglaze with the crème fraîche. Sprinkle in the flour to thicken. Stir in the stock and the remaining parsley. Add the pasta and let it marinate. If there isn’t enough liquid, add more stock. Mix everything well and season to taste. Transfer the pasta to a plate and place the sliced meat on top. If you like it a bit spicier, drizzle with chili sauce.
