Chicken Breast with Sweet Potato Wedges and Apple and Onion Chutney

Ingredients
 

for the chutney

  • 1 Chilli pepper, red
  • 200 g Onion
  • 200 g Apple
  • 100 ml Apple cider or alternatively apple juice
  • 180 g Preserving sugar 2: 1
  • 30 g Ginger
  • 1 Star anise

for chicken breast and sweet potato

  • 4 Chicken breast fillets
  • Salt and pepper
  • 4 Sweet potatoes
  • 4 Garlic cloves
  • 3 Rosemary sprigs
  • 6 Sprigs of thyme
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Clarified butter

Instructions

  • Steam the diced chilli peppers, onions and apples with finely chopped ginger and star anise. Peel off with apple cider or apple juice and apple cider vinegar, add the preserving sugar and cook for 4 minutes.

Chicken breast and the sweet potato wedges

  • Wash the chicken breast, pat dry, season with salt and pepper and fry in clarified butter until the meat has turned color.
  • Mix the peeled and eighthed sweet potatoes, chopped garlic, thyme and rosemary with oil in a roaster and cook in the oven at 200 degrees for 35 minutes, adding the chicken fillets for the last 15 minutes.
  • Put everything on a plate and serve immediately. Enjoy the meal.
