Chicken fillet baked with mozzarella

Ingredients for 4 servings:

  • 4 chicken breasts
  • 3 tomatoes
  • 4 m.-sized potatoes
  • 5 basil leaves
  • 200 ml cream
  • 125 g cream cheese (paprika)
  • 2 cloves garlic
  • 1 m.-sized onion(s)
  • 250g mozzarella
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Clean the chicken fillet and rinse briefly under cold water. Pat dry. Season with salt and pepper. Peel and wash the potatoes, then cut into 5 mm thick slices. Pre-cook in salted water for about 5 minutes. Cut the tomatoes and mozzarella into 5 mm thick slices. Line the bottom of an ovenproof dish with potatoes and arrange the tomatoes on top. Finely chop the basil and sprinkle over the tomatoes. Place about half of the mozzarella on top. Then place the fillets on top and cover with the remaining mozzarella. Finely chop the onion and garlic and sauté briefly in the pan until translucent. Add the cream, heat but do not boil, and dissolve the cream cheese while stirring. Season to taste and pour over the chicken fillets. Cover with aluminum foil and cook in a preheated oven at 180 degrees Celsius for about 25-30 minutes. Remove the foil and bake for another 5-10 minutes. The time also depends on the thickness of the fillets.
