Cheese, garlic and herb spread

Ingredients for 1 servings:

  • 2 bulbs of garlic
  • 250 g sheep’s cheese or cow’s milk cheese
  • 1 sprig of coriander, chopped
  • 1 sprig of celery greens, chopped
  • some rue
  • some vinegar
  • some oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the garlic bulbs and crush them into a paste. Add the grated or shredded hard cheese and the chopped herbs. Mix everything with vinegar and oil to form a paste and season to taste. This is a fairly simple and quick dish, best served as a spread on my military flatbreads. The recipe is listed in my profile as “Old Roman Military Bread – Paninis Militaris.”
