Chicken gizzard basil sauce

Ingredients for 4 servings:

  • 400 g chicken gizzards
  • 2 m.-large tomato(s)
  • 1 onion(s)
  • 2 cloves garlic
  • ½ bunch basil
  • 1 tsp sambal oelek
  • 3 tbsp tomato paste
  • Herbs of Provence
  • salt and pepper
  • Chicken broth

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

spicy sauce for pasta or bread

Clean the chicken gizzards and cut them into ½ cm wide strips across the muscle. Chop the tomatoes and onion, and finely chop the garlic. Simmer the chicken gizzards in the broth until softened. Add the tomatoes, onion, and garlic, season with pepper, salt, and Provençal herbs, and reduce the liquid over low heat. If the sauce becomes too dry, add chicken broth. When all the ingredients are soft, add the sambal oelek, tomato paste, and finely torn basil leaves. Simmer for a few minutes longer, until the basil is soft but not falling apart. Goes well with tagliatelle or baguette.
