Chicken goulash à la Mimbi

Ingredients for 4 servings:

  • 350 g chicken strips
  • 2 thick carrots
  • 1 bell pepper(s), red
  • 1 large onion(s)
  • 1 garlic clove(s)
  • ½ tube(s) tomato paste
  • 250 ml red wine, semi-dry
  • 150 ml vegetable stock
  • olive oil
  • pepper
  • Paprika powder, hot
  • chili powder
  • 500 g pasta, e.g. spirelli
  • 500 g tomatoes, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the carrots, bell peppers, onions, and garlic into small pieces. Heat the olive oil in a pan and sear the chicken. Add the onions and garlic and fry gently. Add the tomato paste and mix well. Deglaze with the red wine. Add the carrots and bell peppers and mix well. Let everything reduce briefly. Pour in the stock until everything is well covered. Simmer for about 20 minutes and season lightly, if desired. Then add the chopped tomatoes and simmer for another 10 minutes. Season to taste with herbs and spices. Serve the goulash with pasta, but it is also delicious with rice.
