Chicken Mango Curry

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) or turkey breast fillet
  • 1 bunch of spring onions
  • 4 tomatoes
  • 400 g yogurt
  • 1 cup crème fraîche
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tbsp mango chutney
  • 1 mango(s), cut into pieces
  • 2 tbsp oil
  • 3 garlic cloves
  • 2 tbsp ketchup
  • ½ tsp cayenne pepper
  • Salt
  • possibly nuts (peanuts, cashew nuts) for sprinkling
  • Desiccated coconut for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Indian, simple, very fruity, great taste

Cut the meat into cubes. Fry in hot oil with the coriander. Remove the seared meat from the pan. Clean the spring onions and chop roughly. Peel the garlic and chop very finely. Add both to the pan and fry briefly, then add the cumin, turmeric, and cayenne pepper. Wash and dice the tomatoes and add to the pan. Also add the yogurt, crème fraîche, ketchup, and mango chutney. Simmer for about 5 minutes until the sauce thickens. Season to taste and adjust the spices if desired. Add the meat and mango pieces again and simmer for another 5 minutes. Arrange on plates and serve, garnishing with nuts (e.g., peanuts, cashews) or desiccated coconut if desired. Rice goes best with this dish.
