Chicken, Mexican style

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) (frozen)
  • 1 bag of vegetables (frozen mix), Mexican style
  • 500 ml broth
  • 1 package of tomato sauce
  • 250 g rice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the chicken breast fillet and, if desired, cut into smaller pieces or cubes. Brown the fillet, then add the Mexican vegetables (the whole bag or less, depending on your preference). Sauté everything until the vegetables are tender. Deglaze with the broth (or add cream if you like). Stir in the tomato sauce or thicken with it. The vegetables are already well seasoned, which adds a spiciness to the whole dish (if you like, you can add more seasoning; Texikana salsa is recommended). Serve with rice.
