Chicken Mumbay
The perfect chicken mumbay recipe with a picture and simple step-by-step instructions.
For the spice paste
- 2 tbsp Curry
- 0,5 tsp Cayenne pepper
- 3 tbsp Yogurt
- 1 tbsp Garlic oil
- 2 Pc. Clove of garlic
- 0,25 Pc. Apple or tropical fruit
Furthermore
- 2 tbsp Garlic oil
- 100 g Cashews
- Chili
- Salt
preparation
- Wash the whole thighs thoroughly. I also use a homemade chilli garlic oil, but pure or just chilli or garlic oil are also possible depending on your taste.
The curry paste
- Thoroughly mix the curry and pepper as well as hot chilli flakes to taste, press in the garlic and rub the apple (mango, pineapple, etc. are also suitable).
- Slowly fold in the yogurt until a paste is formed. Salt to taste.
The thigh
- Now coat the legs thoroughly with the paste.
- Brush an ovenproof dish with chilli and / or garlic oil, then fry the thighs sprinkled with nuts in it for about 20-30 minutes.
tip
- The curry paste is also perfect for marinating grilled food, especially fish and poultry.
- If you don’t want the nuts to be heavily roasted, just add them for the last 10 minutes.
