Chicken noodle salad

Ingredients for 8 servings:

  • 500 g pasta
  • 300 g chicken (cooked chicken strips)
  • 2 can/n mandarin oranges, 200 g each
  • 1 pot of yogurt, approx. 200 g
  • 200 g mayonnaise
  • 2 eggs
  • 1 shot of vinegar
  • curry powder
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 15 minutes; Total time approx. 12 hours 35 minutes

Cook the pasta according to the package instructions, then let it cool. Drain the mandarin oranges, reserving the liquid. Combine the yogurt, mayonnaise, eggs, liquid from the mandarin oranges, and a good splash of vinegar in a large bowl and mix to combine. Add a generous amount of curry powder and season with salt and pepper. Then add the pasta, chicken, and mandarin oranges to the dressing and mix well. Leave the salad in the fridge, ideally overnight, and toss well again before serving. Notes: I usually use pre-cooked chicken strips from the supermarket. You can also fry a chicken breast fillet and chop it up. If you like, you can also chop a bell pepper and add it to the pasta, chicken, and mandarin oranges; this will give the salad a bit of freshness.
