Chicken "quick fix"

Ingredients for 6 servings:

  • 1.6 kg chicken pieces (with and without skin, with and without bones)
  • 3 m.-sized carrot(s)
  • 0.3 kg celery
  • 1 eggplant(s)
  • 3 bell peppers, colored
  • 1 kg potatoes
  • 12 cherry tomatoes
  • 1 small pumpkin(s) (Hokkaido, Butternut, if there is still room)
  • 4 m.-sized onion(s)
  • 6 cloves garlic
  • 2 tbsp, heaped tomato paste
  • ½ cup olive oil, good
  • 1 tbsp, heaped salt
  • Black pepper, freshly ground
  • 1 tbsp, heaped thyme, dried
  • 1 tbsp, heaped basil, dried
  • 1 tbsp, dried dried oregano
  • 1 tbsp, heaped paprika powder
  • 1 tsp, leveled chili powder
  • 0.3 liters of white wine
  • e.g. meat broth, if too little juice is produced
  • Fresh herbs for sprinkling, as desired

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

quick preparation

A few years have passed since I created this dish with my children. One weekend when we had to get by without “Mom,” the weather was beautiful, but we were still hungry, so we decided to cook something quick. We had vegetables and various chicken pieces on hand. We got to work together. The vegetables were roughly chopped and minced at high speed, the garlic was half-heartedly peeled and slammed on it with our fists, and the unpeeled potatoes were halved and quartered depending on their size. All the vegetables, including the chicken pieces, were thrown vigorously into a large roasting pan. Tomato paste, spices, herbs, and olive oil were added. Everything was mixed together with six hands, and then quickly placed in the oven preset to 220°C (top/bottom heat). Then everything was immediately thrown back out into the garden. Thus, the dish “Chicken in a jiffy” was born. When I checked after half an hour, I added a small cup of white wine and rearranged the pieces a bit. Chicken pieces with the skin on the side. After an hour, everything was cooked perfectly, with plenty of juice at the bottom. The side dish of vegetables and potatoes was already included. You can also sprinkle fresh herbs on top at the end. The “chicken at a glance” was very, very delicious and was devoured with great enthusiasm and lots of smacking. Since the neighbors’ children joined in, it was all gone in a flash. Since its success, we’ve had this dish every now and then, and it’s always a hit. Not just with us, but also with the neighbors across several garden fences. The vegetable instructions are only a guideline. Of course, you can vary the types and quantities as you like.
