Chicken rolls with wild garlic and cream cheese filling

Ingredients for 10 servings:

  • 5 chicken schnitzels, thinly sliced, approx. 40 g each
  • salt and pepper
  • 5 slices of raw ham
  • 150 g cream cheese
  • 20 g wild garlic
  • ½ lemon(s) (organic)
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Season the meat with pepper and salt if desired (raw ham is often quite salty), and top each with a slice of ham. Wash the wild garlic leaves, pat dry, remove the stalks, and finely chop the rest. Finely grate the zest of the organic lemon, add it to the cream cheese along with a few squeezes of lemon juice and the wild garlic, and mix everything well. Spread the cream cheese mixture in the center of the ham, taking care not to overdo it so it doesn’t ooze out when rolled up. Fold the sides of the ham lengthwise to the center, then roll up the meat and filling. Heat oil in a pan and fry the rolls all around over medium heat. Let cool slightly, cut diagonally in half, and serve on finger food spoons.
