Chicken skewers with spicy marinade

Ingredients for 1 servings:

  • 250 g chicken breast fillet(s)
  • 4 tbsp oil
  • 2 tbsp water
  • Paprika powder
  • oregano
  • marjoram
  • basil
  • Garlic, fresh or powder
  • salt and pepper

Cut the chicken breast fillet into bite-sized cubes. Mix the remaining ingredients to make a spicy marinade. Add the marinade to the chicken cubes and mix everything together to coat each piece. Then let it rest for at least 2 hours. In the meantime, break the toothpicks in half to create two small skewers each. Heat a non-stick pan without fat. Remove the marinated chicken pieces from the marinade one at a time using two forks and place them in the pan. Sear them until crisp, turning occasionally, until the pieces are cooked through but still juicy. Remove the pan from the heat and skewer one piece at a time with the toothpick halves and place them on a platter. This amount will make 15 to 25 skewers, depending on how large you cut the cubes. Since they taste delicious cold, they’re also great to prepare in advance. The marinade is also ideal for grilling other foods during the barbecue season.
