Ingredients for 10 servings:
- 1,500 g chicken breast fillet(s)
- salt and pepper
- Paprika powder
- possibly chili powder
- n. B. Clarified butter for frying
- 2 large onions
- 500 g mushrooms, brown
- 200 ml vegetable stock
- 600 ml cream
- nutmeg
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes
Cut the chicken breast fillets into bite-sized pieces and season generously with salt, pepper, and paprika. Optionally, you can add a little chili for a spicier version. Brown the chicken strips in a pan with clarified butter and set aside until the sauce is ready. Peel and roughly dice the onions. Clean and finely chop the mushrooms. Melt a little clarified butter in a saucepan and fry the onions and mushrooms until golden brown. Then sauté for about 10 minutes until cooked through. Add the vegetable stock and cream to the mushroom and onion mixture. Season with salt, pepper, and nutmeg, and then puree finely. Pour the mushroom cream sauce over the chicken strips and mix well. It goes very well with pasta or rice. The dish can be easily prepared in advance, for example by placing it in a casserole dish and reheating it in the oven.
