Sauce of fried asparagus with chicken breast

Ingredients for 3 servings:

  • 500 g asparagus (broken asparagus)
  • 250 g chicken breast fillet(s), diced
  • 1 small onion(s)
  • 1 tbsp curry powder
  • salt and pepper
  • Ginger
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the broken asparagus and cut into bite-sized pieces. Sauté in a little peanut oil (or sunflower oil), add the diced onion and the chicken. Sprinkle with plenty of curry powder and fry with the curry. Deglaze with water. The sauce is ready when the asparagus is al dente and the meat is cooked. Season with salt, pepper, and ginger. You can also use soy sauce instead of salt, and coconut milk instead of water. Serve with rice or Chinese noodles (cooked in salted water and then pan-fried).
