Chicken strips with zucchini Zurich style

Ingredients for 2 servings:

  • 300 g mushrooms, fresh
  • 2 tbsp lemon juice
  • 1 large onion(s) or 2 small ones
  • 1 tbsp butter
  • 240 g chicken breast fillet(s) cut into fine strips
  • 120 ml white wine
  • 1 vegetable stock cube
  • 150 ml cream
  • 50 ml milk (or omit and use 50 ml more cream)
  • 1 small zucchini, finely chopped
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Suitable for food combining

Slice the mushrooms and drizzle with lemon juice. Then cover and cook in a small pan for about 2 minutes. Pour the mushroom broth into a cup and season the mushrooms lightly with salt and pepper. Peel the onion and either slice it into thin strips (or coarser if you prefer) or chop it very finely. Heat the butter in a frying pan and fry the onion until crispy. Add the finely chopped chicken and continue to fry everything, stirring occasionally. Remove everything from the pan and set aside. Pour the white wine into the pan and let it reduce slightly. Then add the mushroom broth, stock cube, and zucchini and simmer everything for another 5 minutes (not too hot!). Season to taste with a little salt, pepper, and paprika. Tip: Even though this is technically a food combining dish, you can also cook rice, potatoes, or pasta for your loved ones.
