Chicken thighs in the oven

Ingredients for 2 servings:

  • 6 small chicken thighs
  • ½ red bell pepper(s)
  • 8 small potatoes
  • 1 vegetable onion(s)
  • 4 garlic cloves
  • 1 sprig(s) rosemary
  • 1 tbsp oregano
  • 1 can of tomatoes, chopped
  • Sea salt, coarse
  • Pepper, from the mill
  • curry powder
  • Paprika powder, hot
  • olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes

Season the chicken thighs with curry, paprika, salt, and pepper and place in a large ovenproof dish. Quarter the unpeeled potatoes, cut the onion and bell pepper into 1 cm pieces, and add them to the meat along with the tomatoes. Sprinkle the crushed garlic over the top, along with about 3 tablespoons of olive oil. Sprinkle with oregano. Shake the ovenproof dish to distribute the ingredients evenly. Preheat the oven to 200 degrees Celsius (180 degrees Celsius fan-assisted oven) and bake for 75 minutes.
