Chicken with Basil-cream Sauce

  • 500 g Potatoes triplets
  • 150 g Cherry tomatoes
  • 1 Clove of garlic
  • 250 g Chicken breast
  • 80 g Bacon
  • 200 ml Cream
  • Chopped basil
  • 15 ml Basil paste
  • Olive oil
  • Salt pepper
  1. Preheat the oven to 220 ° C O / U heat.
  2. Wash the potatoes and cut them unpeeled into quarters or halves, depending on their size.
  3. Place the potato wedges, tomatoes whole or halved in a bowl. Press the peeled garlic and add it. Mix with 1 tablespoon of olive oil and season with salt and pepper. Then spread everything on a baking sheet lined with baking paper and bake for about 30 minutes until golden brown.
  4. Season the prepared chicken breast with salt and pepper and wrap each with 2 slices of ham. Heat oil in a pan and fry for a few minutes on each side. Place the chicken breast on the baking sheet with the potatoes for the last 12 minutes and bake until the ham is crispy and the chicken is no longer pink on the inside. You can test this by cutting the thickest part of the chicken.
  5. Concentrate the cream with the basil paste and add to the pan, bring to the boil while stirring. Season with salt and pepper and keep warm.
  6. Finely chop the basil leaves and add to the sauce.
  7. Arrange the potatoes with the tomatoes on plates, add the chicken breast and enjoy with the sauce.
