Chicken with pesto and cheese

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 jar pesto genovese
  • 1 pack of mozzarella, grated
  • salt and pepper
  • Margarine for the mold
  • Paprika powder

Last time I had to cook something with chicken in a hurry. Since I didn’t have much time and didn’t really have many ingredients, I came up with this dish. You take an ovenproof dish and put some margarine in it. Preheat the oven to 180°C. Season the chicken breast fillets with salt, pepper, and paprika and then place them in the ovenproof dish. Then you take the pesto Genovese and spread it on the fillets with a spoon. Quickly spread grated mozzarella over the top and put it in the hot oven. It took me about a quarter of an hour until the cheese was lightly browned. I then turned the oven off and left the meat in for a while. I served it with rice.
