Chicken with tomato and parmesan sauce

Ingredients for 2 servings:

  • 400 g chicken breast
  • 250 ml tomatoes, pureed
  • 50 ml cream
  • 50 g Parmesan
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 1 handful of basil leaves
  • 1 pinch(s) of sugar
  • 1 tbsp Italian herbs
  • salt and pepper
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Wash the chicken, dry it, and season it with salt. Heat a little oil in a pan and sear the meat on both sides, then set it aside. Peel the shallot and garlic and sauté them in the frying fat. Deglaze with the passata and cream. Add the Italian herbs and sugar. Season with salt and pepper. Mix well and add the chicken to the sauce. Cover and simmer for 10-12 minutes. Then stir in the Parmesan cheese and let it melt. Finally, scatter a few basil leaves on top.
