Chicken Wrapped in Spicy tomato-Madeira Sauce

The perfect chicken wrapped in spicy tomato-madeira sauce recipe with a picture and simple step-by-step instructions.

  • 800 g Chicken
  • 6 piece Mushrooms
  • 1 Can Pineapple
  • 1 piece Onion
  • 3 piece Clove of garlic
  • 1 Pc. Red pepper
  • 1 Pc. Yellow pepper
  • 1 Pc. Green peppers
  • 1 liter Oil
  • 3 tbsp Flour
  • 1 tbsp Cornstarch
  • 0,5 tbsp Baking powder
  • 1 Pc. Protein
  • 6 tbsp Sugar
  • 6 tbsp Pineapple juice
  • 6 tbsp Tomato ketchup
  • 4 tbsp Vinegar
  • 2 tbsp Lemon fruit juice
  • 4 tbsp Soy sauce
  • 2 tsp Madeira wine
  • 1 pack Rice

Preparation of the dough:

  1. Beat 3 tbsp flour, 1 tbsp cornstarch, ½ tbsp baking powder, 1 egg white until stiff, put everything together and dilute with a little water. Let it soak for 5 minutes.
  2. Cut the chicken into small pieces and season with salt. Then pour into the batter and then individually into the hot oil. Drain the finished pieces of meat on crepe paper.

Preparation of the sauce:

  1. 6 tablespoons of sugar, 6 tablespoons of pineapple juice, 6 tablespoons of ketchup, 4 tablespoons of vinegar, 2 tablespoons of lemon juice, 4 tablespoons of soy sauce, 2 teaspoons of Madeira, 2 teaspoons of cornstarch, put everything together. Fry the mushrooms, onions, peppers and garlic. Then pour the sauce over it and then add the gratinated pieces of meat. Finished. Serve with rice.
