Ingredients for 2 servings:

  • 4 chicory
  • 4 slice(s) ham, cooked (large slices)
  • 4 slices of Swiss cheese (e.g. Emmental)
  • 1 cup of cream
  • Salt
  • pepper
  • some butter

There are already many chicory recipes on Chefkoch, but I haven’t found one as simple as mine. So here’s one of my favorites: Wash the chicory, halve it, and cut out the bitter stalks. Then season the halves well with salt and pepper. Put the halves back together and wrap each one with a slice of cheese (wrap it around first!) and a slice of cooked ham. Place the roll in an ovenproof pot with a lid. Do the same with the three remaining chicories. Tip: If you don’t like it that way, you can also wrap each half individually. This will make eight smaller rolls, and you’ll need accordingly more slices of cheese and ham. Now pour a cup of cream over the whole thing and spread a knob of butter on each roll. Cover and braise in a preheated oven at 250°C for about half an hour. Serve hot. I serve it with boiled potatoes.
