Chili bulgur stew

Ingredients for 3 servings:

  • 300 g minced beef
  • 1 onion(s)
  • 1 can of tomatoes (850ml)
  • 3 can/n beans, any, red, white, black or green
  • 250 ml water
  • 1 bell pepper(s), red
  • salt and pepper
  • ½ tsp cumin
  • Chili pepper(s), dried, to taste
  • 1 cup bulgur, fine (wheat groats)
  • oil

Brown the ground beef and finely chopped onion in a little oil, add the canned tomatoes, and stir until the tomatoes break down. Add about 1/4 liter of water and season with salt, pepper, cumin, and chilies. Add the diced bell pepper. Simmer for 10 minutes. Drain the beans in the meantime. Add the bulgur and beans to the pot with the ground beef and tomato mixture. Stir in the bulgur well and let it swell for about 10 minutes over low heat. Add a little more liquid, if necessary. Stir carefully occasionally, being careful not to mash the beans. You can of course also use fresh or dried beans and prepare them accordingly beforehand. A dollop of crème fraîche goes well with them.
