Chili – corn – vegetables with spicy sheep's cheese cream

Ingredients for 2 servings:

  • 100 g sheep’s cheese
  • 100 g cream cheese
  • 50 g ajvar or spicy tomato sauce
  • salt and pepper
  • Paprika powder
  • 2 garlic cloves
  • 1 can of corn
  • 1 bell pepper(s), red
  • Chili pepper(s) (Jalapeños, more or less to taste)

Simple, quick and delicious

First, put the cream cheese and ajvar in a bowl and season with paprika, salt, and pepper. Press the garlic cloves into the mixture using a garlic press and crumble the feta cheese into the mixture by hand. Stir the mixture with a hand mixer for about 5 minutes until it becomes creamy. Then set it aside and let it sit for a while. Dice the bell pepper and fry it in a pan over medium heat. Chop the jalapeños and fry them. When the peppers start to soften a little, add the corn and let everything simmer over medium heat. After about 5 minutes, add the prepared feta cheese mixture and let it melt in the pan over medium heat. When the mixture has completely melted, increase the heat a little and heat the vegetables up briefly. Best served with flatbread or baguette. Also delicious with meatballs or grilled meat.
