Ingredients for 3 servings:
- 200 g cherry tomatoes
- 200 g shrimp(s), ready to cook
- 4 tbsp olive oil
- 2 zucchinis
- some thyme stalks
- salt and pepper
- lemon juice
- 50 g almond(s) (salted almonds), chopped
- 350 g spaghetti (chilli garlic spaghetti)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Toss the cherry tomatoes, thyme, and shrimp with oil, then cook in a casserole dish in a preheated oven at 180°C for about 10 minutes. Coarsely grate the zucchini. Meanwhile, cook 350g of spaghetti for about 9 minutes. Three minutes before the end of the cooking time, add the zucchini to the pasta. Drain and toss with the tomatoes and shrimp. Season with salt, pepper, and lemon juice as desired, and serve sprinkled with the salted almonds.
