Ingredients for 4 servings:
- 1 shallot(s)
- 150 g soy shreds (soy pellets), fine
- 1 can kidney beans
- 1 can of corn
- 1 stalk(s) Celery
- 1 bell pepper(s)
- 200 ml red wine
- 60 ml espresso, equivalent to one espresso cup
- 50 g chocolate, at least 70%
- 50 g walnuts
- 2 chili peppers, fresh or dried, alternatively flakes
- 2 bay leaves
- some caraway
- some turmeric powder or curry
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Vegan, vegetarian
Soak the soy pellets in warm water with a generous amount of spices and salt. Finely chop the shallot. Heat the olive oil in a pan, briefly fry the shallot, add the sliced celery and the chopped bell pepper. Continue frying everything. Then add the drained corn and beans, along with the soy pellets, and pour in the red wine. Continue simmering. Add a cup of espresso, and a little more water if needed. Continue simmering and season to taste. Don’t skimp on the chili; fresh or dried chili is best; only use store-bought flakes if necessary. Chop the walnuts and chocolate. Set both aside in small bowls and sprinkle over the still-hot chili. Tastes delicious with rice.
