Chilled Peach and Sparkling Wine Soup with Wild Strawberries.

Ingredients
 

  • 250 ml Rose wine dry
  • 2 tbsp Powdered sugar
  • 2 cl Apricot liqueur
  • 2 pinch Ground vanilla pod
  • 1 Vineyard peaches
  • 250 ml Sparkling wine, chilled !!
  • 2 tbsp Wild strawberries

Instructions
 

  • Bring the wine to the boil together with the liqueur, powdered sugar and the ground vanilla pod and simmer for a good 10 minutes. Then strain through a sieve and let cool. The soup should be refrigerated well before re-use.
  • In the meantime, core the peaches and cut the pulp into small pieces. Lightly clean the wild strawberries (do not wash, otherwise the whole fine taste will be lost)
  • Now pour the ice-cold sparkling wine into the soup, stir briefly and pour into chilled soup bowls. Garnish with the peach pieces and wild strawberries ...... enjoy your meal .....
  • A delicious refreshment in the hot weather.
