Chilled Peach and Sparkling Wine Soup with Wild Strawberries.
The perfect chilled peach and sparkling wine soup with wild strawberries. recipe with a picture and simple step-by-step instructions.
- 250 ml Rose wine dry
- 2 tbsp Powdered sugar
- 2 cl Apricot liqueur
- 2 Msp Ground vanilla pod
- 1 piece Vineyard peaches
- 250 ml Sparkling wine, chilled !!
- 2 tbsp Wild strawberries
- Bring the wine to the boil together with the liqueur, powdered sugar and the ground vanilla pod and simmer for a good 10 minutes. Then strain through a sieve and let cool. The soup should be refrigerated well before re-use.
- In the meantime, core the peaches and cut the pulp into small pieces. Lightly clean the wild strawberries (do not wash, otherwise the whole fine taste will be lost)
- Now pour the ice-cold sparkling wine into the soup, stir briefly and pour into chilled soup bowls. Garnish with the peach pieces and wild strawberries …… enjoy your meal …..
