Chilled Peach and Sparkling Wine Soup with Wild Strawberries.

The perfect chilled peach and sparkling wine soup with wild strawberries. recipe with a picture and simple step-by-step instructions.

  • 250 ml Rose wine dry
  • 2 tbsp Powdered sugar
  • 2 cl Apricot liqueur
  • 2 Msp Ground vanilla pod
  • 1 piece Vineyard peaches
  • 250 ml Sparkling wine, chilled !!
  • 2 tbsp Wild strawberries
  1. Bring the wine to the boil together with the liqueur, powdered sugar and the ground vanilla pod and simmer for a good 10 minutes. Then strain through a sieve and let cool. The soup should be refrigerated well before re-use.
  2. In the meantime, core the peaches and cut the pulp into small pieces. Lightly clean the wild strawberries (do not wash, otherwise the whole fine taste will be lost)
  3. Now pour the ice-cold sparkling wine into the soup, stir briefly and pour into chilled soup bowls. Garnish with the peach pieces and wild strawberries …… enjoy your meal …..
  4. A delicious refreshment in the hot weather.
