Ingredients for 1 servings:
- 120 g marzipan paste
- 100 g powdered sugar
- 30 g flour
- 4 egg whites
- ½ tsp cinnamon, ground
- ½ lemon(s), grated peel
- 4 tbsp cream
- 100 g cake icing (chocolate)
- ¼ liter cream

Mix the marzipan mixture with the sifted powdered sugar, sifted flour, egg whites, cinnamon, and lemon zest until smooth. Cover and refrigerate overnight. Preheat the oven to 190°C. Lightly butter and flour two baking sheets. Stir the cream into the marzipan mixture. Spread the mixture evenly and thinly on both baking sheets and bake one after the other on the middle rack for 3-4 minutes until light brown. Cut the dough sheets into 11×11 cm squares using a pastry wheel. Continue baking until crispy brown, then remove one square at a time from the baking sheet while still hot and place each square over a thick wooden spoon handle. Press together at one end, slide the rolls off the wood, and let cool. Melt the glaze in a water bath. Brush the chimney sweeps with it and fill both sides with the whipped cream.
