Chinese beef with broccoli in oyster sauce

Ingredients for 4 servings:

  • 500 g beef
  • 500 g broccoli
  • 1 pinch of salt
  • ½ tsp sugar
  • ½ tbsp sunflower oil
  • 3 tbsp water
  • ½ tsp baking soda
  • 1 ½ tbsp cornstarch
  • 1 tbsp white wine vinegar
  • Ginger
  • 1 clove(s) garlic
  • 2 tbsp oyster sauce
  • 5 tbsp water
  • 1 tsp cornstarch
  • e.g. sesame

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

First, cut the beef into thin, bite-sized strips. Marinate this with salt, sugar, oil, water, starch, vinegar, and finely chopped or ground ginger. Refrigerate for about 30-45 minutes. In the meantime, cut the broccoli into florets and cook in boiling salted water with the baking soda for about 3-5 minutes. It should still be firm to the bite so it doesn’t become mushy later. After the marinating time, fry the meat with the garlic at high heat until cooked through and golden brown. Now add the broccoli. Mix everything with the oyster sauce. Finally, stir together the starch and water and pour it in. This creates a delicious sauce. Season to taste and, if available, add sesame seeds (for visual appeal). Serve with rice.
