Chinese fortune cookies

Ingredients for 1 servings:

  • 3 egg whites
  • 60 g powdered sugar, sifted
  • 45 g butter, melted
  • 60 g flour

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 40 minutes

Preheat the oven to 180°C (top/bottom heat). Line a baking sheet with baking paper. Draw three 8cm diameter circles on the baking paper. Beat egg whites in a medium bowl until light and fluffy. Add powdered sugar and butter and mix until smooth. Gently stir in flour until smooth. Using the flat edge of a knife, spread about 1.5 level teaspoons of batter onto each circle. Bake for 5 minutes, until the edges are lightly browned. Quickly remove the cookies from the baking sheet using the flat edge of a knife. Place a written good luck message on each cookie. Fold the cookie into a semicircle and then fold it again over a blunt object, such as the side of a bowl. Cool on a wire rack. Do not bake more than 2 or 3 cookies at a time, as otherwise they will harden too quickly and break when folded. Makes about 30 cookies.
