Chinese fortune cookies

Ingredients for 1 servings:

  • 2 egg whites
  • 60 g powdered sugar
  • 25 g butter, soft
  • 40 g flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat egg whites until stiff. Then slowly add the powdered sugar, continuing to beat. Stir in the softened butter. Add the flour and fold in. Let rest for 10 minutes. Preheat oven to 180°C. Line two baking sheets with baking paper. Using a glass with a diameter of about 8 cm, draw three circles on each piece of paper (I made smaller circles; it looks more like real fortune cookies). Spread about 1-1.5 teaspoons of batter onto each circle using a knife. Bake in the oven on the middle rack for about 8 minutes. Then carefully lift the sheet off the baking paper using a wide knife, place the piece of paper in the middle, and fold it in half. Do not crease the back edge; leave it rounded, then crease it in the middle (e.g. using a glass, simply place it over the top edge). Let cool. Repeat with the second baking sheet. To ensure the cookies turn out well, always use a cooled baking sheet and never bake more than 3. (Supposedly, they won’t break then). It just takes about a week for them to really harden. I don’t know if they taste good, because I used them for a love note.
