Chinese glass noodles – as a salad or warm as a side dish

Ingredients for 2 servings:

  • 125 g glass noodles
  • salt water
  • ½ can corn
  • 300 g turkey meat or similar
  • 1 point mushrooms
  • sesame oil
  • 4 tbsp soy sauce
  • Salt
  • optional vegetables of your choice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, place the glass noodles in boiling, salted water for 1-2 minutes. Then, briefly rinse them under cold running water and drain. The glass noodles need to be well salted, so add more salt if necessary (if the water wasn’t salty enough). Place the glass noodles in a bowl and toss with plenty of sesame oil. Wash the turkey (or another type of meat, such as chicken), then pan-fry it and season with salt. Sauté the mushrooms in a pan and lightly fry them (don’t forget to add salt). Then, combine the mushrooms, turkey, corn (and, if you like, carrots and other vegetables—I like to steam snow peas with them) with the glass noodles. Finally, add the soy sauce and mix again.
