'Chinese' noodles

Ingredients for 3 servings:

  • 250g penne
  • Water (salt water)
  • 2 m.-sized carrot(s), cut into cubes
  • 1 m.-sized zucchini, cut into cubes
  • 2 bell peppers, cut into cubes
  • 1 medium-sized onion(s), cut into not too small cubes
  • salt and pepper
  • Spice mix (Chinese spice)
  • Soy sauce
  • 1 clove(s) garlic, diced
  • 1 cup vegetable broth, small cup
  • some oil
  • 1 chili pepper(s), dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

not really Chinese, but tasty

Heat the oil and add the chili pepper, and let it sizzle for about 3-4 minutes. Remove the chili pepper. First, sweat the carrots in the flavored oil. Then add the onions and garlic and let them become translucent. Season everything with a little salt, pepper, and Chinese spice. Add the diced bell peppers and fry for another 2-3 minutes. Finally, add the zucchini and deglaze with soy sauce and vegetable stock, and let it reduce slightly. In the meantime, cook the noodles in salted water until just cooked through, drain well, mix with the vegetables, and let it sit for a few minutes. Stir occasionally so the noodles absorb the mixture! Finally, season to taste with more salt, pepper, or soy sauce! Tip: A sweet chili sauce goes well with this, but sour cream is also always very popular with my guests; it reduces the spiciness a little.
