Ingredients for 2 servings:
- 250 g Chinese egg noodles
- 200 g chicken
- 3 spring onions
- 1 carrot(s)
- 175 g bamboo shoot(s) (drained weight)
- 3 tbsp oil
- 4 tbsp soy sauce, light
- 2 tsp sambal oelek
- curry powder
- Paprika powder, sweet and hot
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook the noodles according to the package instructions. It is recommended to break the dry noodles once if necessary so that they are no longer too long. Cut the chicken into strips and marinate briefly with 1 tablespoon of soy sauce and 1 teaspoon of sambal oelek. Meanwhile, slice the spring onions into rings and cut the carrot into thin sticks. Briefly fry the meat in 3 tablespoons of oil and 1 tablespoon of soy sauce. Add the spring onions, carrot sticks, and drained bamboo shoots. After about 3-5 minutes, add the noodles and fry everything together for another 5 minutes, stirring regularly. Season generously with sambal oelek and soy sauce (about 1 teaspoon of sambal oelek and 1-2 tablespoons of soy sauce) and season with curry powder and paprika. This quantity is sufficient for 2-3 servings.
