Ingredients for 1 servings:

  • 1 kg plum(s)
  • 200 g sugar
  • 2 tsp sea salt
  • 1 tsp star anise
  • 2 tsp chili flakes
  • 1 tsp pepper (Szechuan pepper)
  • 1 tsp black pepper from the mill
  • 50 ml soy sauce, dark
  • 100 ml red wine vinegar

very tasty sauce, suitable for Chinese dishes

Wash, stone, and dice the plums. Mix with sugar and salt and let stand for at least 2 hours to release their juices. Grind the star anise and Sichuan peppercorns and add them to the plums along with the chili flakes and black pepper. Bring the plums to a boil, then simmer over low heat until very soft. Strain the plum jam and slowly reduce it with the soy sauce and vinegar. It should have a thick consistency. Season to taste with sugar, salt, pepper, vinegar, or soy sauce. While hot, pour into twist-off jars and seal immediately. The sauce is particularly delicious with roasted or grilled duck.
