Chocolate – After Eight – Cookies

Ingredients for 1 servings:

  • 85 g butter
  • 110 g brown sugar
  • 15 ml water
  • 170 g semi-sweet chocolate
  • 1 egg(s)
  • 160 g flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • 10 chocolate mint bars, e.g. After Eight
  • possibly grease for the tray

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

great Christmas cookies

Melt the sugar, butter, and water over medium heat, stirring constantly. Add the chocolate, melt, then remove from the heat and let cool for 10 minutes. Pour the chocolate mixture into a mixing bowl and mix in the egg. Then add the flour, baking powder, and salt. Cover and refrigerate for 1 hour. Preheat the oven to 175°C (350°F), grease a baking tray (I personally prefer baking paper). Shape the dough into walnut-sized balls, place them about 4 cm apart on the tray, and bake for 8-10 minutes. Note: Baking times vary depending on the oven. It’s perfectly normal for balls to melt into cookies! After baking, let cool for 1 minute and press 1/2 of the After Eight onto each cookie. Once the After Eight has melted, swirl it around with a toothpick (so no one can see the cute After Eight pattern).
