Ingredients for 1 servings:

  • 200 g almonds, grated
  • 50 g dark chocolate
  • 125 g sugar
  • 1 tsp vanilla sugar, bourbon
  • 2 egg whites
  • 1 pinch of salt
  • 7 drops of bitter almond flavor
  • Powdered sugar, for dusting

Finely grate the chocolate and mix it with the almonds in a bowl. Add the sugar and vanilla sugar. Beat the egg whites and salt until semi-stiff and add them to the almond mixture along with the bitter almond flavoring. Knead into a firm, moist dough. Using 2 teaspoons, place small heaps onto a baking sheet lined with baking paper. Bake in a preheated oven (175°C for electric ovens, 150°C for fan ovens, and 30°C for gas mark 3) for 12-15 minutes. Cool on a wire rack. Dust with icing sugar. Makes approximately 30 cookies.
