Chocolate-banana cinnamon ice cream

Ingredients for 1 servings:

  • 3 large egg yolks
  • 155 g sugar
  • 250 g dark chocolate
  • 500 ml milk, whole milk
  • 3 ripe bananas (400g)
  • 2 tbsp cinnamon, ground
  • 500 ml cream

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

In a bowl, beat the egg yolks and sugar until thick and creamy. Chop the chocolate and add it to a saucepan with the milk. Heat over medium heat, stirring constantly. Keep heating until the chocolate has melted. Then simmer gently for about 1 minute, stirring constantly. Slowly stir this mixture into the egg/sugar mixture. Return this to the saucepan and heat over medium heat, stirring constantly, until thickened. It is very important that it does not boil. Transfer to a bowl and let cool to room temperature. Once this is done, peel the bananas and mash them well in a plate. Stir the cinnamon into the mixture, then add this to the chocolate/milk mixture and stir in. Whisk the cream until semi-stiff until it begins to thicken. Stir this into the chocolate mixture and transfer to a freezer container. Cover and refrigerate for at least 4 hours. Then process into ice cream in an ice cream maker according to the manufacturer’s instructions and serve.
