Ingredients for 1 servings:

  • 2 eggs
  • 125 g sugar
  • 250 g butter, soft
  • 1 pinch of salt
  • 200 g flour
  • 175 g cornstarch
  • 60 g cocoa powder
  • 100 ml milk
  • 150 g apricot jam
  • 150 g chocolate coating

Working time approx. 45 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

Whisk the eggs and sugar in a bowl. Add the butter and continue whisking. Add the salt, flour, cornstarch, and cocoa powder. Finally, add enough milk until the batter reaches a creamy consistency. Fill the batter into a piping bag fitted with a star nozzle and pipe bear paw shapes onto a baking sheet. Bake in a preheated oven at 200°C for 10-12 minutes. Once the cookies have cooled, spread two cookies each with warm, strained apricot jam and sandwich them together. When the jam has dried slightly, dip half of the cookie in melted chocolate coating.
